Creamy Burrata Pasta Salad
When temperatures climb into the 90s and 100s, we like to stay cool by enjoying this Creamy Burrata Pasta Salad for dinner. It's super quick and easy, which is a must for me during hot days. Find the recipe below.
You'll need:
2 cups of halved grape tomatoes
3-4 cloves of fresh garlic
fresh basil
red wine vinegar
olive oil (bonus points if it's your favorite infused olive oil)
salt and pepper
pasta of your choice
freshly grated Parmesan Reggiano
Burrata
Instructions:
Step 1: Boil a pot of water and salt the water liberally. Add pasta of your choice.
Step 2: Crush garlic cloves and combine with halved grape tomatoes in a large serving bowl. Add red wine vinegar, olive oil, and fresh cracked pepper to taste.
Step 3: Drain cooked pasta and rinse with cold water. Add pasta to serving bowl with marinated tomatoes.
Step 4: Top dish with whole leaves of fresh basil and grated Parmesan Reggiano.
Step 5: Add Burrata, and luxuriate in tearing it open. This creamy and delicious pasta salad can be enjoyed room temperature or chilled!
